The Peace of Wild Things

When despair for the world grows in me
and I wake in the night at the least sound
in fear of what my life and my children’s lives may be,
I go and lie down where the wood drake
rests in his beauty on the water, and the great heron feeds.
I come into the peace of wild things
who do not tax their lives with forethought
of grief. I come into the presence of still water.
And I feel above me the day-blind stars
waiting with their light. For a time
I rest in the grace of the world, and am free.

I have one of these giant salads almost every day (it’s in a large pasta bowl). You can grow half the ingredients yourself, and things like avocados are often reduced in the veg aisle at the stage when they’re perfectly ripe (which is handy). My salad usually contains:

Mixed salad leaves
Thinly sliced red onion
Red pepper – chunks
Avocado – sliced
Cherry tomatoes
Sliced chilled cucumber
Whole unsalted cashews (important – use nuts in salads)
Drizzled with olive oil
Balsamic vinegar (with fig)

I tend to add anything else lurking that I think will add to the taste, e.g. sliced pickled gerkins.

I use ground black peppercorns on every meal. Black pepper not only adds to taste, but is high in calcium, potassium, manganese and iron, and has plenty of selenium and zinc. Black pepper has been shown to fight cancerous cells, reduces cholesterol and is anti-bacterial and anti-oxidant. That stuff is vital!

Have your salad with a big glass of water with lemon juice. I’m always stuffed after these salads. Anyone who says they’re not didn’t make it big enough. You can’t eat too much salad! Packed full of vitamins and trace elements. Make one every day – you won’t regret it.

Lifestyle Changes to Improve Your Muscle Tone Without Eating Meat | One Green Planet

Speaking as a vegan woman who has weight-trained in the past, was a 100m sprinter, works in a physically demanding job, does indoor climbing, field archery and has been (slowly) learning German longsword for two years, I find I have the same if not better muscle tone since dropping dairy four years ago. I have well developed upper body muscle tone and strength, and lower body, and that hasn’t changed since going vegan. Given that most people in today’s sedentary and physically limited world never fully work their bodies, a vegan diet should be ideal and more than enough protein.

There is no need to eat animal protein to survive, nor to be strong, fit and healthy. Indeed, it seems there is mounting evidence suggesting that we are not at all suited, as a species, to heavily meat-based and dairy-based diets. If we can be healthy and happy without eating animals and the mammary secretions of other animals, why wouldn’t we choose that option?
